Cucumber & Mint Green Smoothie

I make no secret of the fact that I’m a massive fan of juices and smoothies; the greener they are the better!

I wanted to share one of my current favourite green smoothie recipes. This is a nice and sweet recipe with an added kick of mint and lemon, enjoyable at any time of the day. I prefer to have my green smoothie first thing in the morning, it gets me off to a good healthy start and keeps me feeling fuller until mid morning.

If you are new to green smoothies, I recommend trying this recipe with a little less spinach and lemon. The flavours in this smoothie are quite strong, and if your palette is not used to green smoothies you might find it overpowering! If you want to make green smoothies a part of your lifestyle, you can start by adding a little bit of spinach or greens to your regular fruit based smoothies and gradually building up as your taste buds adapt. You fill find that you will want to add more and more greens and veggies as your taste buds get used to the taste! Your body will start to love it!

 Cucumber & Mint Green Smoothie

Ingredients:
1 ripe banana
A handful of spinach
1/2 lemon*
4-5 mint leaves*
Approx 1/4 cucumber
250ml water

*You can add more/less depending on personal preference.

Directions:
Squeeze the juice from the lemon and add to blender. Chop remaining ingredients and add to blender. Add water and blend until you get a nice smooth consistency. Enjoy!
